I grew up in a meat and potatoes kind of family, and most of the time we had beef. My mom made oven roasts and pot-roasts, stews, burgers, steaks, ribs, stir fry, meatloaf, and pretty much anything else you can think of that can be made with beef.
I think beef has been and always will be my meat of choice. It’s just so darn versatile and full of flavor, so as a beef fan, I’m partnering with the Motherhood to share some tips about beef and help you become a savvy meat shopper.
Types of Beef: Grass-fed vs. Grain-fed
FACT: All cattle are grass-fed for most of their lives. It’s just the finishing that determines whether the beef will be labeled grass-fed or grain-fed.
Know Your Beef Cuts
My mom used to buy a whole side of beef at a time, so I’m pretty familiar with a lot of the beef cuts and how to cook them, but it can be overwhelming when you’re shopping for beef if you aren’t familiar with them.
The more tender cuts of beef are rib, loin, plate and flank. Cuts that need marination to help tenderize them are chuck, brisket and round.
But the ideal tool to help you select the right cuts at the meat case is the Interactive Butcher Counter.

Beef and Health
One serving of lean beef is 3 ounces (about the size of a deck of cards) and contains nearly half of the daily value for protein, less than 10 grams of fat, 4.5 grams or less of saturated fat, and less than 95 mg of cholesterol.
Types of lean beef include top sirloin, flank steak, strip steak, tenderloin, brisket (flat half) and 93%+ lean ground beef.

Alas, NOT because I do not like the meat, but my goodness, the PRICE of beef these days. I freak out. When ground beef is 3.00 a lb? What???? Ground beef used to be.. well, considered the least desirable of “cuts” and it was so cheap. What in the world happened? I actually worked in a slaughter house back in Kansas the summer before college and I got to know the cuts quiet well. I love a good chuck or a loin.
We used to buy a whole cow from one of the cattle ranchers back in Kansas and then take it to butcher and have it cut down. It was a HUGE savings and filled up our freezer for a year. LOL A cow is ENORMOUS and you get a lot of meat off of one.

I do like me a good beef roast too though. I had a chance a couple of years ago to visit a calf/cow ranch and a feed lot and it was a very educational experience.

I love that lean beef chart. I’d never heard of the Power of 10 before but good to know! I started to realize lately that you get such good value with the chuck steaks. They’re good for slow-cooking and sometimes quite tender. I love this post. I’m definitely going to bookmark this!

My boys grew up in FFA so they were so good at being able to identify the parts of the animal and what meat is made out of it.. Makes my head spin. I’m just in charge of cooking it and it’s normally ground up by the time I get it.

Beef is so expensive. I’m lucky that I have family that raises cattle. I get an entire cow every year for cheap. These are great tips for people who don’t have that option.

Almost all of this is new to me, there is so much I never new! We actually eat quite a bit of beef but I’m not always sure what cuts are best for which types of meals, and I really had a lot of other questions about beef too…this is great info, thank Liz!

I think my favorite cut is sirliion steak because you can do so much with it from grilling. slow cooking and using leftovers. It’s just a versetile cut of beef. We try buying 1/2s too. I am glad you pointed out the grain vs grass fed- nost dont know that
