It’s after school snack time!
I remember how happy I felt when I got home from school every afternoon. After shrugging off my backpack, I headed straight for the cookie jar for an after school snack. We were each allowed to have two cookies, but sometimes mom wasn’t there yet when we got home…
Fistfuls, I tell ya!
She did lots of from scratch baking, but other than at holiday time, cookies were store bought. I can’t remember a single time when we had something homemade, but I can’t blame her. There were six of us kids!
Later when I had my own kids coming home after school with rumbling tummies, I surprised them often with freshly baked treats and I loved seeing their wide eyes and happy smiles of excitement.
There’s just nothing better than homemade, and these soft and chewy snack bars make the perfect after-school munchies.
While you might suspect I used marshmallows in these, I didn’t! I used Karo Syrup because it’s the only widely distributed brand of corn syrup that contains 0 grams of high-fructose corn syrup, and it helps make some darn good desserts!
In fact this recipe is largely a Karo Syrup recipe, but I added Biscoff cookie spread in place of peanut butter and omg, it works. Seriously, these are drool-worthy!
For the record, you could make the recipe and substitute the cookie spread for hazelnut spread or peanut butter, but I assure you that the way I made the bars is killer good.
Cookie-Crisped Pretzel Bars
Ingredients
- 1 cup Karo Light Corn Syrup
- 1 cup sugar
- ½ cup Biscoff cookie spread* creamy or crunchy - I used crunchy
- 5 cups crisped rice cereal
- 2 cups pretzel pieces
- 1 cup candy-coated chocolate pieces
Instructions
- Cook corn syrup and sugar together in a large saucepan or Dutch oven over medium heat, stirring to dissolve sugar. Bring mixture to a boil. Remove from heat. Stir in Biscoff spread.
- Add cereal, pretzels and chocolate pieces; stir until coated. Press into a greased 15 x10-inch pan. Cool and cut into bars or triangles.
