I’m excited to be partnering with the National Peanut Board over the next few months to share the importance of cooking with superfoods and including them in our meals and snacks.
Peanuts are a superfood since they pack more protein than any other nut, and contain 30 vitamins and minerals! They pair beautifully with so many other foods too, including kale, another superfood we’re seeing just about everywhere these days.
Admittedly, I’ve been a little slow to board the “cooking with kale train”, so I didn’t even realize there were several varieties to choose from. I’ve also been a little afraid of the potential bitterness, but chef and pediatrician Dr. Julia Nordgren says it’s really all about how it’s prepared.
She shows how to choose between the kale varieties and how best to cook it to reduce the bitterness and bring out the best flavor. Watch her as she makes a Kale Salad with Peanut Vinaigrette. YUM!
