Oh man, do I ever love a good grilled burger. In fact, that’s probably the only time I eat hamburgers, so I’m thrilled that we’re back in cookout season again.
Charcoal grilling, baby!
The convenience of a gas grill is undeniable, but the flavor of charcoal grilling is something I refuse to do without. I simply can’t.
Last weekend I tried a recipe from a cookbook called All Fired Up. I wish I could flip through the pages for you because the food photos would have you drooling! The recipe ideas and inspiration come from Troy Black, director of the Sam’s Club National BBQ Tour.
I am suuuuuuuper picky about ground beef, but I have to admit that Sam’s Club has a premium meat selection. I rarely need it in gigantic Sam’s Club size quantities, but I’m all about freezing it in smaller amounts.
And for these burgers, I did purchase a package of their ground sirloin. (The recipe calls for a mix of sirloin and chuck, but it would take me all summer to use that much ground beef so I just picked sirloin.)
Pineapple Jalapeno Burgers
Ingredients
1 lb ground sirloin
1 lb ground chuck
1 tsp salt
1/2 tsp freshly ground pepper
1/3 cup pickled sliced jalapeno peppers, minced
6 (1/4-inch-thick) pineapple slices
Hamburger buns
Cilantro-Jalapeno Cream
Toppings of choice: avocado slices, fresh cilantro sprigs, diced red onion, pepper-jack cheese
Directions
1. Preheat grill 350-450 degrees (med-high heat). Combine first 4 ingredients gently. Stir minced jalapeno peppers into meat mixture. Shape into patties. Grill, covered about 4-5 minutes on each side until no longer pink in center.
2. Grill pineapple 1-2 minutes on each side. (Never mind how well done I like my burgers. Just never you mind about that.)
3. Serve burgers on buns, top with Cilantro-Jalapeno Cream, grilled pineapple and desired toppings.
Cilantro-Jalapeno Cream
1/2 cup sour cream
1/4 cup chopped fresh cilantro
1 medium jalapeno pepper, seeded and minced
2 Tbsp fresh lime juice
Combine all ingredients; let stand at room temp 30 minutes. Can be stored in fridge for 2 days in airtight container.
This was the perfect way to kick off grilling season over here. The Cilantro Jalapeno Cream was marvelous on these burgers, absolutely marvelous!
