Wrapped in a blanket of powdered sugar, these Snowball Cookies (also known as Russian tea cakes or Mexican wedding cookies) are buttery melt-in-your-mouth Christmas cookies!
½cupsifted powdered sugarplus extra for rolling in
1teaspoonpure vanilla extract
2 ¼cupsall-purpose flour
¼teaspoonsalt
¾cupfinely chopped pecansoptional, but recommended
Instructions
Preheat oven to 400 degrees Fahrenheit.
Mix butter, powdered sugar, and vanilla thoroughly.
Stir flour and salt together; blend into sugar and butter mixture. If adding nuts, mix those in as well.
Roll dough in 1-inch balls, and place on ungreased baking sheet.
Bake 10 to 12 minutes, or until set but not brown.
While still warm, roll in powdered sugar. Cool completely, and then roll in powdered sugar again.
