Thai Chicken and Fried Rice Wontons are bite-sized but they pack a whole lot of flavor and deliciousness into each bite. Great as a meal or as appetizers.
Heat oven to 350 degrees. Spray cooking spray on mini muffin tins. Line with wonton wrappers; brush lightly with oil.Sautee chicken in olive oil for 4 minutes over med-high heat. Add onions, garlic and red chili pepper and continue sauteeing for about 3 minutes or until chicken is fully cooked. Remove from heat. Mix in chili sauce, red curry paste and basil. Set aside.Cook one pouch Ling Ling rice in microwave according to package directions.Bake empty wontons for 5 minutes. Remove from oven. Spoon fried rice into cups and top with a few pieces of cooked chicken. Return to oven and bake 5-7 minutes. Serve immediately.
