Instructions
If you're using Wildgrain English Muffins as I do, bake them according to the package directions. They go from freezer to oven and bake for 15 minutes, then rest for 5 minutes. Then you can slice them for this recipe (or griddle them in butter because they're SO dang good like that.) For other English muffins, split them in half and toast them. Lay the halves cut side up on a baking sheet.
Add pulled pork, BBQ sauce, shredded cheese, bacon and a couple of jalapeno slices, if using, on top of each English muffin half.
Put under the broiler in the oven for several minutes until the cheese is melted and beginning to brown. Be sure to watch carefully—it doesn't take long. (I usually use the middle rack of my oven to broil these, so they don't burn as quickly.)
Notes
Ingredient amounts can be customized to personal preference; more or less, as desired.
If jalapenos aren't your thing, add a couple of dill pickle slices instead.
If you really want it cheesy, you could use cheese slices instead of shredded cheese.
