In a medium bowl, whisk together Bisquick, egg, milk and vanilla just until moistened. Let rest for at least 5 minutes.
Preheat electric skillet or griddle to 375 degrees. Spray with butter or olive oil cooking spray. Pour 1/4 cup batter for each pancake, immediately placing shaved ham over top. Cook until bubbles begin to pop and bottoms are golden. Flip pancake and cook until pancake is golden and ham is starting to brown. Serve drizzled with maple syrup.
