Ingredients

softened

sugar

almond extract

baking powder

cardamom

teaspoon
cinnamon

apricot jam

teaspoon
grated fresh ginger
Instructions
Preheat oven to 350 degrees.
Beat butter and sugars together until light and fluffy, about 5 minutes. Mix in egg and almond extract.
In separate bowl, whisk together flour, baking powder, salt and cardamom. Gradually add to sugar mixture until it forms a dough.
Press two-thirds of the dough into the bottom of an ungreased 8 x 8-inch baking pan.
In small bowl, mix together apricot and ginger. Spread over crust.
Crumble remaining dough over the top.
Bake 30 to 35 minutes or until golden brown. Cool completely before cutting into squares.
