These mini butterscotch apple cakes are ridiculously good! Perfectly moist and loaded with fresh apples and butterscotch morsels that, when paired together, will blow your mind.
Preheat oven to 350 degrees. Grease and flour mini loaf pans.
In mixer, cream sugar, oil, eggs and vanilla together.
In a separate bowl, sift together flour, salt, baking powder and baking soda. Add to sugar mixture and combine. Batter will be thick. Mix in apples.
Pour into prepared loaf pans, filling about ⅔ full. You'll have enough batter for approximately 8 cakes.
Bake for 5 minutes. Remove and sprinkle butterscotch chips on top of each cake. Return to oven and bake 30-45 minutes or until toothpick or knife inserted in center comes out clean. (Oven cook times will vary.) Let cool 10-15 minutes in pan before removing cakes to wire racks. Delicious served warm or at room temp and perfect with a scoop of vanilla ice cream.
To bake in one large pan
Pour batter into a greased and floured 9x13-inch baking pan. Bake for 25 minutes, remove and sprinkle butterscotch chips evenly over the cake. Return to oven and bake 30 minutes or until toothpick or knife inserted in center comes out clean.

Helpful Tips
Apples - Use a sweet apple like Honeycrisp, Fuji or Gala. You do not have to peel them, but you can, if you'd like.
Grater - Use a coarse, not fine, grater, or you'll end up with apple mush. This is the multi-grater I use. I like it because it has non-slip feet and can stand right over the bowl.
Mini loaf pan - This is the one I have. Actually, I have two of them. They're nonstick and have a nice weight to them
Baking spray with flour - Even though I use a nonstick loaf pan, I always prep it with a flour-based baking spray like this one.
