In large bowl, mix together butter and all remaining ingredients until thoroughly combined.
Spoon onto parchment paper or plastic wrap. Roll into log shape, and seal the edges. Refrigerate overnight or at least 2 hours.
Preheat oven to 350 degrees. Remove husks and silks from corn, and spread with the cilantro lime butter or put pats of butter across top. Roll tightly in foil and place on rimmed cookie sheet.
Roast about 30 minutes. Carefully unwrap the aluminum foil and serve as a dish to your favorite meal!
Notes
If you like a kick of heat, add some diced jalapenos along with the cilantro lime butter before roasting.
