Start your morning with this simple yet flavorful Amish Breakfast Casserole. Packed with savory bacon, sausage, eggs, cheeses, and hearty potatoes, it's an easy-to-make dish for a satisfying breakfast.
2cupsshredded cheddar cheeseextra for melting on top, if desired
1¼cupsshredded Swiss cheeseextra for melting on top, if desired
1½cups4% cottage cheese
1cuppre-cooked breakfast sausage crumbles
½teaspoonsalt
½teaspoonblack pepper
½teaspoonsmoked paprika
chives, chopped
Instructions
Preheat oven to 350 degrees F.
Fry bacon until very crisp; crumble and set aside. Drain off all but a few tablespoons of the drippings. Cook the chopped onions and red peppers in the drippings until soft and tender. Set aside.
In a large bowl, combine remaining ingredients. (egg, hash browns, cottage cheese, shredded cheese, sausage, salt, pepper, smoked paprika)
Stir in about ¾ of the chopped bacon and all of the onions and red peppers.
Pour mixture into a greased 13x9-inch baking dish.
Bake 35-40 minutes. Sprinkle reserved bacon over top and extra cheese, if desired. Return to oven for 2-3 minutes or until cheese melts. Sprinkle chopped chives over the top before serving.
Notes
Storage: Cover tightly and keep in the refrigerator for up to 3 days or freezer for 1-2 months.
