Ingredients

Instructions
Preheat oven to 350°F (or 325°F if using a glass baking pan). Lightly spray a 9x13-inch pan with cooking spray.
In a large bowl, beat together the sugar, oil, and eggs until well combined.
In a separate bowl, sift together the flour, baking soda, salt, and cinnamon.
Set aside a small portion of the flour mixture and use it to coat the dates and raisins.
Gradually add the remaining flour mixture to the sugar mixture, blending until smooth.
Stir in the vanilla, apples, and the flour-coated dates and raisins.
Pour the batter into the prepared pan and bake for about 45 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely, then frost with your favorite icing.
