215 oz cansgreat northern beans, rinsed and drained
215 oz cansnavy beans, rinsed and drained
2 15 oz cansseasoned turnip greens, with their liquidor 1 pound bag frozen turnip greens, thawed
1teaspoonblack pepperor to taste
1teaspoonhot sauce
2cupscooked ditalini
Instructions
Add the andouille sausage and onion to a large stockpot over medium-high heat. Cook until the sausage begins to brown and the onion is soft and fragrant. Add the garlic and cook for one additional minute, stirring frequently.
Add the chicken broth, vegetable recipe mix, beans, turnip greens, hot sauce and black pepper. Stir to combine.
Bring the soup to a boil. Cover, reduce the heat to low and simmer for one hour.
Add the cooked ditalini during the final 15 minutes of cooking. If you plan to freeze the soup, keep the pasta separate and add it to individual bowls instead.
Notes
For a milder soup, substitute kielbasa, chicken sausage or turkey sausage for the andouille. Chopped ham also works.
Cannellini beans or black-eyed peas can replace either variety of white beans.
Collard greens, mustard greens or spinach can replace the turnip greens. Thaw frozen greens before using and wash fresh greens thoroughly.
Use low-sodium chicken broth, rinse the canned beans and taste the finished soup before adding salt.
Tubetti or elbow macaroni can replace the ditalini.
If you expect leftovers or plan to freeze the soup, keep the cooked pasta separate and add it to individual servings.
For a vegetarian version, omit the sausage and use vegetable broth.
For the slow-cooker method, brown the sausage and onion first. Add the garlic and cook for one minute. Transfer everything except the pasta to the slow cooker and cook on Low for 5 to 6 hours. Add the cooked pasta during the final 15 minutes.
