We’ve all heard of fruit pizza, right? Good stuff. But, let’s level that up a notch, and make a fruit pizza pancake.

Yep, you heard me right… I said fruit pizza pancake.

It sounds wackadoo, but look at it.

I mean…

It’s so dang easy to make too.

I swear.

Fruit Pizza Pancake recipe

Basically, you’re going to take some blueberry pancake mix and a few extra ingredients and bake a giant fluffy pancake pizza.

Like so.

Then the real fun begins.

Decorating!

Spread a mixture of cream cheese and marshmallow fluff over the top of the pancake, and then layer on your favorite fresh fruit any which way you wanna.

Slice the fruit pizza pancake into eight equal slices of puffy, fluffy, fruity goodness.

Start your day with a fresh fruit pizza pancake loaded with strawberries, blueberries and kiwi on every slice.

Ingredients
  

Crust

  • 1 cup Krusteaz Blueberry Pancake Mix
  • ¾ cup milk
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 egg
  • 2 tablespoons oil
  • 2 cups

Topping

  • 8 oz whipped cream cheese, original flavor
  • 7 oz jar marshmallow fluff
  • ½ quart strawberries hulled and sliced
  • ½ cup blueberries
  • 2 kiwis peeled and sliced

Instructions
 

  • Preheat oven to 350°F. Lightly grease an insulated baking sheet.
  • In a large bowl mix ingredients for pizza crust and pour onto greased and insulated baking sheet. Using a spatula, gradually work batter out to a 12” circle. Bake 20 minutes.

  • In large bowl, mix all ingredients for pizza crust and pour onto prepared baking sheet. Use a spatula to gradually work the batter out to 12" circle. Bake 20 minutes.
  • In small bowl, mix cream cheese and marshmallow fluff together. Spread over baked pancake pizza. Lay strawberries, blueberries and kiwi slices on top to decorate. Cut pizza into 8 slices.

Notes

Recipe Swaps:
You could substitute buttermilk pancake mix for the blueberry pancake mix, if desired.
Try it with chocolate hazelnut spread (Nutella) instead of the cream cheese and marshmallow fluff.

    Sounds awesome, I’m a fan of both pizza and pancakes so it would seem right to put them together. Fruit sounds good but I would have to make one with some chocolate too! Maybe a peanut butter cream cheese spread with chocolate chips!

    This is adorable and would be so fun for kids! Krusteaz used to make a vegan apple spice pancake mix that was truly epic. They quit making it 15 years ago and I still miss it! Also their cinnamon crumble cake mix is amazing.

    I love fruit pizza, but never thought to apply the concept to a pancake! What a genius breakfast idea. I would use whipped cream (a vegan one made with coconut milk) instead of a blend of marshmallow fluff and cream cheese. I like that the pancake is baked too. Yum.

    I don’t think it sounds wacky at all. I love the idea of fruit pizza and all the flavors. I just never get around to making it!

    Omg, this looks so fantastic and delicious. Thanks so much for sharing–reminds me of a similar tort I used to get when I spent summers in Germany (I think maybe it’s the addition of the kiwis?). In any event, I’d love to try this 🙂

Hey there, i’m Liz!

I’m the founder of Eat Move Make and a North Carolina mom of two humans and six cats. I love to cook, bake, craft and travel. I’m also addicted to tea (but not sweet tea).

When I’m not creating something in my kitchen, and since my kids are now adults, I’m all about my bucket list of travel destinations and adventures.
