Maple roasted bacon with glazed pecans… that’s what’s up!

Now that we’re in the warm weather months, I was going to make a salad or combine nuts with fresh veggies or fruit. But then I got a taste and a craving…

You know how sometimes you try a new taste, and you can’t stop thinking about it? Well, that’s what happened to me when I was at a breakfast event where they served the most delicious bacon delicacy.

It involved bacon and maple syrup and brown sugar and pecans. Yes, pecans! I never, ever would have thought to sprinkle pecans (or any nuts) on bacon, but now that I’ve tasted it, I can’t get enough.

So I made my own version of it at home and baby, this is good!

strips of bacon on white tray

Ingredients

1/2 cup pecans, chopped
1 pkg thick-cut bacon (thick-cut is way better for this recipe, trust me)
1 cup maple syrup
1/2 cup brown sugar

(That’s all you need, and the amounts aren’t all that important. Just play around and do whatever seems right to you.)

Directions

1. Chop the pecan halves; set aside.

2. Preheat oven to 250-275 degrees. Now you want to cover the bacon strips in maple syrup, so you can either dredge them by dunking, or you can lay the bacon strips on a rimmed cookie sheet and add the maple syrup with a brush. But in the end, all those maple-soused bacon strips need to get on that cookie sheet.

3. Sprinkle little pinches of brown sugar atop the syrup covered bacon strips, and finally for the piece de resistance, sprinkle on those delicious chopped pecans. Feel free to brush a touch more maple syrup over everything if you’d like.

4. Bake for 1 to 1 1/2 hours or until bacon reaches desired doneness.

Love pecans? Try this pecan pudding pie too!

I make a whip cream salad with fresh and canned fruits and walnuts that is really good. Just whip up a pint of cream with a teaspoon of vanilla and a little sugar, add 1 can of drained canned fruit, I usually use the Dole chunky mixed fruit, an apple, peeled and chopped up and about a 1/4 cup of coarsely chopped up walnuts.

Both my wife and i are chefs and we LOVE maple, bacon, and nuts..especially Fisher nuts. Of us both she’s the baker and makes delicious carrot cakes, cookies, and more with Fisher pecans, walnuts, and almonds. I enjoy toasting Fisher nuts and sprinkling them on my vanilla yogurt in the mornings for breakfast. I’ll also add a handful of blueberries or raspberries. Sometimes i’ll eat them straight out of the bag before a bike ride. We’re just “nuts” about Fisher! pun intended! 🙂

    Spicy Almond Recipe
One of the greatest things about nuts is that they are easy to transport, but sometimes, well, they’re just a little boring. Spice up your next snack mix with this spicy recipe:

    1/2 tsp ground cumin
    1/2 tsp chili powder
    1/2 tsp curry powder
    1/2 tsp garlic salt
    1/4 tsp cayenne pepper
    1/4 tsp powdered ginger
    1/4 tsp ground cinnamon
    2 tbsp olive oil
2 cups of whole almonds, shelled
    1 tbsp sea salt

In a non-stick skillet heat the olive oil and spices over low heat for 3 or so minutes. Place the nuts in a bowl and pour oil mixture over the top, toss and stir. Then, spread nuts into a single layer on a non-stick baking sheet and pop in a oven at 300 degrees for 15 minutes, shaking the tray about every 5 minutes to cook evenly. Remove from oven and sprinkle with sea salt. Let cool two hours. Store in an airtight container.

For a special treat (Father’s Day, Honey/Hubby’s BD?) I simply have to try the Maple Roasted Bacon with Glazed Pecans – if I served these with spouse’s favorite German Apple Pancakes – he’d be in heaven (unfortunately – maybe literally…)

To (kind of) make up for the special splurges I can make one of our many salads that feature nuts – aside from the traditional Waldorf salad, Apple or Pears and nuts (pecans, walnuts or almonds) are great with any kind of greens with dried cranberries and BLUE CHEESE – to make this a meatless main course salad I sometimes add cooked (peeled) and sliced potatoes, purple and/or golden BEETS, a bitterish green (watercress, arugula, escarole or endive) and a simple white wine vinaigrette – topping with a little bacon??? Hey, why not?

I use Pecans in my Chocolate Butter Pecan Turtle Bars! The pecans give this dessert a nice crunchy flavor! And it is so delicious!

Nuts really spruce up stuffing. Just add a few walnuts broken up and it makes your stuffing really tasty! So simple!

I love nuts, nuts, and more nuts. It’s good to simply season them with garlic, chili powder, toss with some melted butter and roast in the oven. Not all the additives of store-bought flavored nuts.

Nuts in cooking? Everywhere! They go in our salads, in our baked goods (love a good nut topping on muffins!), in my stuffed mushrooms. Nuts are so versatile; they can go sweet or savory with no effort. Fav recipe is probably my MIL’s crumble–fresh fruit topped with rolled oats and nuts with a little butter to hold it together…
