Roland Foods Organic Soba Noodles (thin brown buckwheat noodles) are perfect for stir-fries and soups, but if you don’t want to turn on the stove for long right now (I don’t!), they are fabulous in a cold salad. Soba noodles have a slippery (not slimy or gummy) texture that goes perfectly with hot OR cold meals.
Cooking them is easy too. Add the soba noodles to 6 cups of boiling water. Let the water return to a boil, then lower the heat to a simmer for 3 minutes or until the noodles are tender. Drain, and rinse in cold water.
I used them to make a cold noodle salad with spicy peanut sauce and the whole family loved them. I’ve never had cold Asian noodles before, but I’m hooked. These organic soba noodles from Roland Foods are going in my pantry staples.
