On weekends I love to make brunch recipes, so I made this kickin’ Tex-Mex breakfast bake recipe for the family the other day. The kick comes from some chiles and a little cayenne pepper, and you can turn that up a notch or down a notch according to taste.

Tex-Mex Breakfast Bake - Simply Orange Low Acid orange juice

The reduced acid gives it such a smooth, mild, delicious taste, and just like the other Simply Orange varieties, it’s never sweetened, never concentrated and never frozen. It goes great with this Tex-Mex breakfast bake recipe, but it’s also perfect in a glass on its own.

Try this Tex-Mex breakfast bake recipe for a kick of heat in your weekend brunch. It's a tasty egg casserole everyone will love!

Ingredients
  

  • 1 Tbsp butter melted
  • 12 eggs beaten
  • 4 cups shredded Mexican-style cheese
  • 16- oz carton cottage cheese
  • ½ cup flour
  • 1 tsp salt
  • 1 can tomatoes with green chiles
  • 2 teaspoons chili powder
  • ½ teaspoon cayenne pepper

Instructions
 

  • Preheat oven to 350 degrees.
  • Brush melted butter on bottom and sides of a 9x13x2-inch baking dish.
  • In large bowl, whisk eggs. Whisk in cheeses, flour and salt. Stir in tomatoes. Pour into baking dish.
  • Bake 50 – 60 minutes, or until set and golden on top.

    I never tried buying this brand of orange juice before but wish I knew about it when I was preggers. I used to get really bad heartburn when I would drink orange juice because of the acidity of it.

    My daughter needs to try this low acid orange juice since she has a sensitive stomach. -I- need to try this Twx Amex breakfast bake…yum!

    Oh I will have to try this orange juice. I have severe acid reflux and LOVE a glass of OJ in the morning – it is my ritual. I swear if I don’t get my OJ i the morning – I am grouchy for the day!

    That breakfast bake sounds great, breakfast is my favorite meal and I love finding new recipes to try! Orange juice is yummy, and lower acid is better for our teeth!

I’m the founder of Eat Move Make and a North Carolina mom of two humans and six cats. I love to cook, bake, craft and travel. I’m also addicted to tea (but not sweet tea).
