This Thanksgiving leftover salad is the perfect way to use up the mishmash of leftovers from Thanksgiving in a recipe that feels completely different from the big Thursday feast.

It has all the flavors of Thanksgiving but it’s a salad, so you’ll feel great about eating lighter after having overindulged (oh, that’s just me?) on the holiday itself.

The inspiration for this Thanksgiving leftover salad came from reading 10 Things to Make With Your Leftovers from Thanksgiving on the Food Lion Fresh Ideas blog.

We usually just microwave our leftovers and get sick of them after a few days, but after reading the Fresh Ideas article, I was inspired to try something new. It has ideas for using up cranberry sauce, a white turkey chili recipe and so much more.

So when you get tired of those leftovers, don’t throw them out!

Try something new instead… like this Thanksgiving leftovers salad.

To make the salad, choose your favorite greens and start adding your leftovers.

For my salad, I began with leftover turkey slices, dried cranberries, celery (extra from making stuffing) and shredded cheese.

And don’t be afraid to use your cooked veggies! I had some spiced butternut squash and corn which made wonderful additions to the salad.

I also took my extra dinner rolls and cut them into cubes. Then I drizzled on some olive oil, salt, pepper and rubbed sage and baked them in the oven until they were brown and crispy.

Tip: Don’t underbake them or they’ll get mushy too quickly in your salad.

Making a salad from Thanksgiving leftovers is going to be my new post-Thanksgiving tradition!
