Strawberry Marshmallow Cake

This strawberry marshmallow cake is full of magic, and that’s one of the reasons my kids always loved it. They’d help sprinkle the marshmallows on the bottom of the dish, but somehow magically they ended up at the top of the cake every time. They got such a kick out of it!

One of the reasons I love this strawberry marshmallow cake is that it’s made with frozen strawberries, so it can easily be made year-round. Another reason is that it’s cake.

Strawberry Marshmallow Cake

Start by letting those frozen strawberries thaw in all their sweet syrup, then stir in a box of strawberry JELL-O.

Mix up the cake batter, then pour it over the marshmallows in a baking pan, and spoon the strawberries on top of the batter. The tricky little marshmallows will already start poking their fluffy bits up top. Now bake until golden brown.

Mmmm, looks delicious, and you can eat it when it cools. Or you can level up and add some glaze.

I like to drizzle a powdered sugar glaze over the top. Indeed.

Cut into squares, and add a few frozen (or fresh) berries on top of each serving. Now dig in!

This strawberry marshmallow cake is full of magic. Marshmallows start on the bottom, strawberries start on the top, and they magically switch places.

Ingredients
  

  • 1 cup mini marshmallows
  • 2 10- oz pkg frozen sliced strawberries in syrup thawed
  • 1 3 oz pkg strawberry flavored JELL-O
  • 2 ¼ cup flour
  • 1 ½ cups sugar
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 tsp vanilla
  • ½ cup shortening or butter
  • 3 eggs

Instructions
 

  • Preheat oven to 350 degrees. Grease bottom only of 13 x 9-inch baking pan. Sprinkle marshmallows evenly over bottom of pan.
  • Thoroughly combine thawed strawberries and syrup with dry gelatin; set aside.
  • In large mixing bowl, combine flour, sugar, baking powder and salt. Add remaining ingredients. Beat on low speed until moistened. Continue beating on medium speed for 3 minutes.
  • Pour batter evenly into pan over marshmallows. Evenly spoon strawberry mixture over batter.
  • Bake for 45-50 minutes until golden brown and toothpick inserted in center comes out clean.

    I have made this recipe numerous times. I was ecstatic when I FINALLY found it. I searched in I don’t know how many on-line recipe books for what seamed like an eternity. Now that being said; the reason for the mad search was my mom used to bake this cake when I was little. She couldn’t remember the recipe and her recipe book had gotten destroyed. I baked it and it took me back 35 years. Just saying thank you for publishing it. Just curious how did you come about the recipe.

    Now this is interesting. I have never seen a strawberry marshmallow cake. I am not usually fan of marshmallows in things, but the way they rise to the top and get all golden brown… yum…makes me want to try it.

    My mom would love this cake! She loves anything strawberry! This recipe is easy to make and the ingredients are not hard to find. I will be busy in the kitchen today. Soon as I am done, I’m walking over to mom’s house so we can enjoy this delicious strawberry marshmallow cake!

    I’m always looking for different things to do with frozen berries. We keep them in our freezer for smoothies but that’s about it. I rarely see recipes using them. Thanks for sharing this recipe.

Hey there, i’m Liz!
