Strawberry Marshmallow Cake

This strawberry marshmallow cake is full of magic, and that’s one of the reasons my kids always loved it. They’d help sprinkle the marshmallows on the bottom of the dish, but somehow magically they ended up at the top of the cake every time. They got such a kick out of it!

One of the reasons I love this strawberry marshmallow cake is that it’s made with frozen strawberries, so it can easily be made year-round. Another reason is that it’s cake.

Strawberry Marshmallow Cake

Start by letting those frozen strawberries thaw in all their sweet syrup, then stir in a box of strawberry JELL-O.

Mix up the cake batter, then pour it over the marshmallows in a baking pan, and spoon the strawberries on top of the batter. The tricky little marshmallows will already start poking their fluffy bits up top. Now bake until golden brown.

Mmmm, looks delicious, and you can eat it when it cools. Or you can level up and add some glaze.

I like to drizzle a powdered sugar glaze over the top. Indeed.

Cut into squares, and add a few frozen (or fresh) berries on top of each serving. Now dig in!

Ingredients
  

  • 1 cup mini marshmallows
  • 2 10- oz pkg frozen sliced strawberries in syrup thawed
  • 1 3 oz pkg strawberry flavored JELL-O
  • 2 ÂĽ cup flour
  • 1 ½ cups sugar
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 tsp vanilla
  • ½ cup shortening or butter
  • 3 eggs

Instructions
 

  • Preheat oven to 350 degrees. Grease bottom only of 13 x 9-inch baking pan. Sprinkle marshmallows evenly over bottom of pan.
  • Thoroughly combine thawed strawberries and syrup with dry gelatin; set aside.
  • In large mixing bowl, combine flour, sugar, baking powder and salt. Add remaining ingredients. Beat on low speed until moistened. Continue beating on medium speed for 3 minutes.
  • Pour batter evenly into pan over marshmallows. Evenly spoon strawberry mixture over batter.
  • Bake for 45-50 minutes until golden brown and toothpick inserted in center comes out clean.
