Swiss Steak with Potatoes and Green Beans

This Swiss steak (round steak in tomato sauce) is so good! It’s just one of many round steak recipes I serve my family. Gotta keep dinner interesting, right?

Swiss steak is made using round steaks which are leaner, tougher cuts of meat, so they need to be tenderized. I tenderize round steak myself by using a meat tenderizer tool, but you can always ask the butcher to do it for you when you’re purchasing the meat in the grocery store.

For this Swiss steak recipe, I use a top round steak and after I tenderize it on both sides (I REALLY pound it hard), I place it in a large frying pan (that’s oven-safe) and brown it on both sides.

Once the round steak is browned, add some beef broth to it.

Next comes tomato soup, bay leaves and oregano.

Then add the cubed potatoes.

And finally the onion.

Bake for 45 minutes then sprinkle the drained green beans over the top.

Bake it for another 20 minutes uncovered. Before serving, remove the bay leaves and season with salt and pepper to taste.

Ingredients
  

  • 1 1/2-2 lb top round steak tenderized
  • salt
  • black pepper
  • 1 beef bouillon cube or 1/2 tsp granules
  • ½ cup boiling water
  • 3 10 1/4-oz cans condensed tomato soup
  • 2 bay leaves
  • ½ teaspoon oregano
  • 1 lb russet potatoes peeled and chopped into 1/2-inch cubes
  • 1 medium onion diced
  • 2 15-oz cans French style green beans drained

Instructions
 

  • Preheat oven to 375 degrees.
  • Cut round steak into smaller serving pieces. Salt and pepper both sides, then brown both sides in skillet over medium-high heat. Remove from heat
  • Meanwhile, add beef bouillon to boiling water; stir to dissolve completely.
  • Pour beef bouillon mixture over round steaks. Pour tomato soup over top. Add bay leaves and oregano. Add potatoes and onions. Cover and bake in oven for 45 minutes.
  • Add drained green beans to top. Uncover; bake 20 minutes and serve. (Remove bay leaves before serving.) Season with salt and pepper to taste.
