Blueberry Brie Grilled Cheese Paninis

Grilled cheese fans, you absolutely have to try these crazy delicious Blueberry Brie Grilled Cheese Paninis. If you love my grilled cheese patty melts, my grilled cheese paninis with fig and prosciutto, and my pumpkin grilled cheese sammies, you have to try this recipe next!

The combination of salty turkey, sweet blueberry puree, creamy melted Brie and crunchy bread is to die for! It’s super simple to make—but difficult to forget.

What Makes This Recipe Special

Round Top Cafe Cookbook

I was gifted a cookbook for review and chose to make this delicious recipe.

This recipe has long been feeding the souls of happy customers at Royers Round Top Cafe in Texas and it’s part of the new Cooking with JB & Jamie: Royers Round Top Cafe Cookbook. The small but wildly popular bistro has been serving up simple but flavorful homestyle meals for over 30 years.

Now you can enjoy the cafe’s longtime favorite dishes in your own home and this blueberry grilled cheese is just one of the eatery’s beloved recipes. There are over 100 recipes in the cookbook including some of their famous pies!

Ingredients

  • Turkey – A high-quality deli turkey is perfect. I’m a huge fan of peppered turkey so that’s what I use. I also recommend having the deli shave it or slice it very thinly. (You could also use leftover turkey from Thanksgiving!)
  • Brie Cheese – You’ll need about half a wheel, but you’ll want to cut off the rind beforehand. Pro tip: If you freeze the Brie, it will make rind removal easier.
  • Blueberries – Use fresh blueberries! (If you have fresh blueberries in the freezer from an earlier visit to a blueberry farm, that’s totally fine.)
  • Bread – The best bread for paninis is ciabatta bread but other Italian bread like focaccia or baguettes will also work. You want a dense, hard roll that will stand up to the pressure of the panini press.
  • Jalapenos – Use one for a subtle kick and more if you really like the heat.

How to Make

Step 1: Put blueberries in a skillet with the sugar and jalapenos and cook over medium heat until the blueberries break down and form a thick sauce. (About 15 minutes.)

Step 2: Cut off outer rind of brie and slice into ¼-inch slices.

Step 3: Top one slice of bread with blueberry mixture. Top another slice with turkey, and a couple of slices of Brie. Sandwich both pieces together.

Step 4: Heat panini press and brush with olive oil. Place sandwich on panini press.

Step 5: Close lid and cook according to manufacturer’s directions until cheese is melted and panini is golden and crisp. (I use this panini press and 6 minutes is perfect.)

The panini press will give those characteristic ridges to the bread as it heats through. Yumminess!

What is a panini sandwich?

A panini sandwich is pressed on a heated grill so that grill marks are left on the outside and the ingredients melt together.

What kind of bread is best for paninis?

The best bread for paninis is ciabatta bread but other Italian bread like focaccia or baguettes will also work. You want a dense, hard roll that will stand up to the pressure of the panini press.

Can you leave the rind on Brie cheese?

That’s up to you. It’s completely edible and helps the cheese hold its shape when heated, but in the case of a grilled cheese where you want the cheese to ooze and melt, it’s best removed.

Can you make a panini without a panini press?

You could use a cast iron pan with ridges and put a weight on top of the sandwich while cooking.

Notes

If you don’t have a panini press, you could use a cast iron pan with ridges and put a weight on top of the sandwich while cooking. It will have perfect panini-style ridges when done.
The best bread for paninis is ciabatta bread but other Italian bread like focaccia or baguettes will also work. You want a dense, hard roll that will stand up to the pressure of the panini press.
For easier Brie rind removal, freeze the cheese before cutting.
