Slow Cooker Turkey Fajitas Recipe

Busy day? Toss the ingredients for slow cooker turkey fajitas in the crockpot in the morning and when dinnertime rolls around the cookin’s already done.

Just warm up some tortillas to fill and supper is served!

To make slow cooker turkey fajitas, slice a pound of turkey cutlets into strips.

Add the turkey, salsa, bell pepper strips, black beans, corn, chili powder, garlic and lime juice into the slow cooker and mix it all up.

Let that cook about 6 hours on low or 4 hours on high.

Spoon the fajita filling onto the center of the eight warmed tortillas.

Sprinkle on some shredded cheese, lettuce, tomatoes and sour cream or use your favorite toppings.

Roll up the tortillas and serve!

Ingredients
  

  • 1 pound turkey breast cutlets cut into strips
  • 2 cups chunky salsa or picante sauce
  • 1 15.5 ounce can black beans rinsed and drained
  • 1 ½ cups frozen corn thawed
  • 2 large red or green peppers cut into strips
  • 1 tablespoon chili powder
  • 2 tablespoons lime juice
  • 3 cloves garlic minced
  • 8 flour tortillas warmed
  • 1 cup shredded Mexican cheese blend

Instructions
 

  • Stir turkey, salsa, peppers, corn, black beans, chili powder, lime juice and garlic in slow cooker. Cover and cook until turkey is cooked through. (Low - 6 to 7 hours) (High - 3 to 4 hours)
  • Spoon about 1/2 cup of turkey filling into center of each tortilla. Top with shredded cheese and any other toppings you'd like and roll up tortillas.
