Chicken orzo casserole is so comforting and delicious!

It’s a simple casserole so you can have it on the table in less than 30 minutes and you probably have most of the ingredients in your pantry or freezer.

I especially love this chicken orzo casserole because of the orzo’s soft and creamy texture. 

Oh my goodness, this is a delicious meal!

You’ll need to cook the orzo in advance to the al dente stage and set it aside.

Saute green onions in butter until tender.

Then you’ll add the corn and cooked broccoli.

Toss in some chicken.

And then add the orzo.

Stir in the chicken broth, cream of celery soup and seasoning blend and bring the mixture to a simmer.

Cover and let cook for about 5 minutes or until mixture is completely heated through and bubbling, but stir occasionally to ensure the orzo doesn’t stick to the pan.

What to serve with chicken and orzo casserole

A light and refreshing salad is the perfect way to complete the meal. 

Recipe variations

  • Instead of broccoli, add peas, carrots, green beans or even frozen spinach (cooked and drained well).
  • Instead of chicken, try ham or turkey.
  • Add black beans.
  • Instead of Mrs. Dash Original Seasoning Blend, try Garlic and Herb, Onion and Herb, Lemon Pepper or your favorite homemade seasoning blend.
  • Sprinkle a little shredded cheese on top at the end and let it melt.

Ingredients
  

  • 2 tablespoons butter
  • ½ cup green onions sliced
  • 2 cups frozen corn
  • 10 ounces broccoli florets cooked
  • 1 12.5 ounce can premium chunk white meat chicken
  • 16 ounces orzo cooked and drained
  • 2 cups chicken broth
  • 1 10 3/4-ounce can cream of celery soup
  • 1 tablespoon Mrs. Dash Original Blend

Instructions
 

  • Heat butter in large skillet over medium heat. Add green onions and cook until tender. Add corn, broccoli and orzo.
  • Stir chicken broth, cream of celery soup and Mrs. Dash seasoning into skillet. Bring to a boil, then reduce heat to a simmer. Cover and let cook about 5-8 minutes or until mixture is hot throughout. (Stir occasionally as orzo has a tendency to stick to the pan.)
