I get so excited about sharing certain recipes, and this slow cooker Italian beef recipe is one of them. It makes such zesty, flavorful and tender Italian beef sandwiches. They’re irresistible!

While I do enjoy regular roast beef sandwiches, they don’t have “zing”, and I love me some zing. It’s safe to say everyone else does too since I never seem to have leftovers of this.

Slow Cooker Italian Beef Sandwiches

Throw everything in a slow cooker and let the seasonings cook into the beef for hours. Before serving, you’ll stir in the pièce de résistance -deli-sliced mild pepper rings.

They’re soooo good, and they bring the ‘ka-pow’ to this slow cooker Italian beef recipe.

Don’t be surprised if this crockpot Italian beef recipe becomes a family favorite at your house too.

Ingredients

  • 2 lb shaved beef or a chuck roast, trimmed of fat
  • 1 pkg dry Italian salad dressing mix
  • 1 cup water
  • 16 oz jar deli-sliced mild pepper rings drained
  • Sandwich rolls of choice
  • Optional: 1/2 to 1 tablespoon red pepper flakes

Instructions

  • Place beef into the slow cooker. Add Italian salad dressing mix, water and if you want the extra kick of heat, add the optional red pepper flakes.
  • Cook on low setting 6-8 hours.
  • About 15 minutes before serving, stir in pepper rings. If using a chuck roast, pull apart with fork when fully cooked. Add pepper rings and let meat roast in juices for 30 minutes to one hour.
  • Toast sandwich buns under broiler and then serve with a generous amount of Italian beef.

I actually went to the deli and had them slice rare boarshead London broil in very thin slices. Stacked it in the slow cooker and 5 hours in it was perfectly done on low. Do you add the pepperocini jar juice in as well?

I’ve never tried that, but my concern is that it would overcook and become very dry and tough. I think you might be disappointed.

made this today for dinner….only cooked for 5 1/2 hours on low heat….turned to mush….very disappointed…..also think 2 packs of italian seasoning was too much….very salty……hate to say but will never make this again….waste of about 30 bucks…..

I’m so sorry to hear you didn’t like it. The shaved beef definitely breaks down so I understand that it wouldn’t be to everyone’s liking. For those who prefer a bit more substance to the meat, I suggest using a trimmed chuck roast, shredded at the last hour when adding the peppers.

Slow cookers are great, they help cooking beans and lentils, you just mix things and walk away. The texture of veggies can be anything from “al dente” to very soft. Practice with times though, sometimes you don’t really need 6-8 hours, 2 hours will do just fine and easy clean up!

That’s not a dumb question! I actually buy shaved beef from the meat section in the grocery store. I find it easier during the summer months, but if your store doesn’t have it, you can ask them to get it. Alternatively, you could use a rump roast and let it cook on low for 10 hours or so. It should tenderize to the point where you can pull it apart with forks, then add your peppers and serve. 🙂

I find mine at Harris Teeter in 1 pound packages of very thinly sliced sheets of raw beef. If you haven’t seen them yet, call up the butcher at your grocery store meat counter, and ask them if they can get it for you. Good luck!
