Leftover Turkey & White Cheddar Broccoli Casserole

This leftover turkey & white cheddar broccoli casserole makes great use of those Thanksgiving leftovers, and it has a totally different flavor from the holiday meal (thank goodness). 

After all, what’s great on Thanksgiving isn’t necessarily great for days on end, so switch it up with this delicious casserole recipe!

Leftover Turkey & White Cheddar Broccoli Casserole

The key to the recipe is to use Knorr Selects White Cheddar Broccoli Rice (found in the rice aisle at Food Lion). It takes Thanksgiving leftovers to a better place, believe me. 

Knorr Selects are also gluten-free and contain zero artificial flavors or preservatives, so you can feel great when you #DoMoreWithKnorr and serve it to your family.

 

Start by chopping up all that Thanksgiving turkey into bite-size pieces.

Then you’ll prepare the Knorr Selects White Cheddar Broccoli Rice as directed and when it’s about done, add in some cream of mushroom soup, cheese, French fried onions and of course, that leftover turkey.

Bake it in the oven, and then this happens.

Leftover turkey & white cheddar broccoli casserole takes boring ol' Thanksgiving leftover turkey and transforms it with flavor!

Ingredients
  

  • 1 pkg Knorr Selects White Cheddar Broccoli Rice prepared according to package directions
  • 1 ½ cups milk
  • 1 cup water
  • 2 tablespoons oil
  • 1 10.5 oz can cream of mushroom soup
  • 3 cups turkey breast chopped
  • 1 cup shredded cheddar cheese divided
  • 1 cup French fried onions divided

Instructions
 

  • Preheat oven to 350 degrees.
  • Prepare Knorr Selects White Cheddar Broccoli Rice according to package directions.
  • Just before it's done, stir in cream of mushroom soup, 1/2 cup cheese and 1/2 cup French fried onions. Mix in turkey. 
  • Pour into greased casserole dish. Sprinkle with remaining cheese and onions. Bake uncovered for 10 minutes or until cheese melts and onions start to brown.

    Wow, love all that cheesy goodness! We always have a TON of leftover turkey because even though there are usually just four of us, my mom buys a ginormous bird. She likes having leftovers, but after the second day of eating a repeat reheating Thanksgiving meal, we’re kind of bored with it. This is perfect!
