Red, White and Blueberry Oatmeal Bars

Looking for a delightful treat that’s easy to make and perfect for July 4th (or any day)? Try our Red, White, and Blueberry Oatmeal Bars! These bars combine a buttery oatmeal base with a sweet jam filling, creating a delicious dessert everyone will love.

I first whipped up these delightful Red, White, and Blueberry Oatmeal Bars by enhancing a boxed raspberry dessert mix. However, since that mix is no longer on the market, I decided to revamp the recipe entirely from scratch. Now, you can enjoy these scrumptious bars without relying on a boxed mix!

This new version of blueberry and raspberry oatmeal bars has a buttery oat crust, a generous layer of luscious raspberry jam, juicy blueberries, and a crumbly, irresistible topping. It’s a comforting and downright delicious treat and a perfect 4th of July dessert.

Ingredients

Directions

Step 1: In a medium bowl, mix melted butter and brown sugar together. Mix in the egg. In a separate bowl, combine flour, baking powder, salt, and oats. Add the brown sugar mixture to the flour mixture, then press 2/3 of it into the bottom of a square baking pan lined with parchment paper for the crust layer. Set the remaining 1/3 of the mixture aside.

Step 2: Spread the raspberry jam over the crust.

Step 3: Sprinkle on 1/2 cup of fresh blueberries.

Step 4: Drop the remaining crumble in random chunks over the top. Bake.

Step 5: Let cool in pan completely before lifting with the parchment paper handles and cutting into individual red, white, and blueberry oatmeal bars.

Expert Tips (Aka Learn From My Mistakes)

  • RESIST the urge to use more than one cup of jam (because there’s a little left in the jar). It’s too much; trust me.
  • When spreading the raspberry jam over the crust, don’t spread the jam all the way to the pan edges; leave a small border. This will result in neat, tidy bars. If you spread it to the edges like mine, they’ll be a bit messier. (I like the extra gooeyness, but they’re much easier to handle when the jam isn’t oozing everywhere.)

Ingredients
  

  • ½ cup unsalted butter melted (1 stick)
  • ½ cup brown sugar tightly packed
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1½ cups traditional rolled oats
  • ½ tsp baking powder
  • ¼ teaspoon salt
  • 1 cup raspberry jam or preserves
  • ½ cup fresh blueberries

Instructions
 

  • Heat oven to 350 degrees F. Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.
  • In medium bowl, stir together melted butter and brown sugar until smooth. Stir in egg until fully mixed.
  • In separate large bowl, stir flour, salt, baking powder and oats together. Add brown sugar mixture to flour mixture to make crust mix, stirring until fully blended. Press 2/3 of the oatmeal crust mix evenly into the bottom of the prepared pan.
  • Spread raspberry filling evenly over oatmeal crust. Sprinkle ½ cup blueberries over raspberry filling. Crumble remaining crust mixture over the blueberries.
  • Bake 30-35 minutes or until the top is golden and the edges are bubbling. Let it cool completely in the pan before lifting it out with the parchment paper handles to cut into bars.
