Libby’s has a brand new Digital Recipe Box app on Facebook with loads of recipes (over 100) using Libby’s products, and Facebook fans can easily sort through them based on type of dish, category or ingredient then “like”, print and share with friends.
Since I can access Facebook from my computer or my phone, I’ll be able to check for ingredients while at the grocery store or refer to the recipes while preparing them in the kitchen.
You can also follow Libby’s on Pinterest now! Along with recipes, there are family activity ideas, home maintenance tips and nutrition advice.
To celebrate the new Digital Recipe box and Pinterest launch, Libby’s sent me a gift pack which included some canned fruits and vegetables and I busted out those peas immediately!
The Midwest is casserole country and since I hail from that region, casseroles are total feel good food for me. So when I was sick this month, I headed straight for the comfort of one of my favorite casseroles.
Tater Tot Casserole
1-1 1/2 lb ground beef, browned and drained
1 can Libby’s sweet peas, drained
1 can condensed cream of chicken soup
1 pkg frozen tater tots (I like to partially thaw them)
4-6 cheese slices
Salt and pepper to taste
1. Brown ground beef and and add salt and pepper to taste. Add to casserole dish along with the undiluted cream of chicken soup.
2. Add can of Libby’s sweet peas and gently mix in with soup and ground beef.
3. Top with tater tots.
4. Lay slices of cheese over the tater tots. I sprinkled some crushed red pepper on mine too.
5. Bake at 350 degrees, covered, for about 1 hour if tater tots are partially thawed. If they’re completely frozen, you’ll likely need to bake it for about 1 1/2 hours in order to make sure the tots are heated through all the way.
And since Libby’s sent along some fruit cocktail, I decided to have that for dessert. Yum!
