I have had the best time working with Campbell Soup Company over the last six months. Not only have I thoroughly enjoyed the cheeky humor of the Wisest Kid in the Whole World, but I’ve discovered even more ways to use Campbell’s Condensed soups.

They make for the most feel-good, satisfying meals.

I’ve made Slow Cooker Chicken Tortilla soup, a Pepperoni White Pizza Skillet and a Cheesy Chile Corn Casserole, all of which are now in my personal recipe box of favorites.

And this month, I made another hot and soothing meal — Cheesy Chicken Potato Casserole with Campbell’s Condensed Cream of Chicken soup.

Bring the kids into the kitchen and make it a family event to make dinner. Kids love to help out, so let them mix, add, stir and sprinkle. I guarantee they’ll have fun, and so will you!

Ingredients
  

  • Vegetable cooking spray
  • 1 10.5 oz can Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
  • 1 cup sour cream
  • 2 cups shredded Cheddar cheese or Colby Jack cheese
  • ½ cup milk
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • 1 28 oz pkg frozen diced potatoes or hash browns thawed
  • 1 4 oz can diced jalapenos (for less heat, substitute diced green chiles) for less heat, substitute diced green chiles
  • Salt
  • 3 cups shredded cooked chicken or 1 12.5-oz can premium chunk white chicken breast
  • 5 slices bacon cooked and crumbled

Instructions
 

  • Heat the oven to 375°F. Spray a 13x9x2-inch baking dish with the cooking spray.
  • Stir the soup, sour cream, 1 cup cheese, diced jalapenos or chiles, milk, garlic powder and black pepper in a medium bowl.
  • Spread the potatoes in the baking dish. Season the potatoes with the salt and additional black pepper. Top with the chicken. Spread the soup mixture over the chicken. Cover the baking dish.
  • Bake for 40 minutes or until the potatoes are tender and the mixture is hot and bubbling. Uncover the baking dish. Sprinkle with the remaining cheese and crumbled bacon.
  • Bake, uncovered, for 5 minutes or until the cheese is melted.

Campbell's Cheesy Chicken Potato Casserole

    I put peas and a small carton of sauteed mushrooms in it. LOVE jalepeno peppers, but not everyone does, so I leave them as a garnishing options at the table. I was going to caramelize some onions but forgot to add them in LOL.

    This looks delicious! I am going to try it. My spin on it will be to use fresh potatoes instead of frozen. I’ll grate them in the food processor, which could make it a little more budget friendly. But I’m doing that because I have potatoes that need to be used.

    My frustration with Campbell’s is that it’s difficult to find non-dairy versions of their soups. Plus, it’s almost impossible to find gluten free varieties. Until that becomes easier Campbell’s is off the table for us.

    Oh I bet this is SO good! I have something similar my mom makes but it doesn’t have the bacon or jalapenos. I definitely want to try it with the bacon in it next time. I think I’d like the jalapenos, but my kids can be funny about spicy peppers.

    My hubby and I can’t eat potatoes (so sad), but all 4 of my kids would love this! The combination of potatoes, cheese, sour cream and bacon is definitely a winner!!!

    That looks delicious, Campbell’s soup is a great start to many meals. I got my kitchen unpacked yesterday at my new home and as I pulled out all the Cream of soups I was coming up with quick dinners I could make so I could feed my family while still getting settled in. I love Campbells.

    This would be a great recipe to make using leftover chicken – every time I bake a whole chicken, I am always at a loss for what to do with the leftover. Next time – I am making this!

    Yum! The spin I would put on this would be to use lower fat cheese, so I would still get all the taste and texture of the casserole without all the fat. Looks delish!
