I love bar cookies, especially these springtime almond bars. Bar cookies are a wee bit fancier than regular cookies, and they’re usually rich and sinful tasting. When I want an impressive but easy-to-make dessert to serve for Easter brunch or a family get-together, bar cookies are always my friend.

With a rich, buttery crust, delectable almond filling and light drizzle of icing, these delectable bar cookies are a sweet delight.

With a rich, buttery crust, delectable almond filling and light drizzle of icing, these delectable bar cookies are a sweet delight.

Ingredients
  

Crust

  • 1 stick butter softened
  • ½ cup shortening
  • ½ cup brown sugar
  • ½ cup white sugar
  • 1 egg
  • 2 cups flour
  • ¼ tsp salt
  • ½ tsp baking powder

Filling

  • 1 cup almond paste crumbled or grated
  • ¾ cup sugar
  • 2 eggs
  • ¼ tsp salt
  • 1 ½ tsp almond extract

Icing

  • 1 cup powdered sugar
  • 1 Tbsp soft margarine
  • 2 Tbsp water or milk
  • 1-2 drops food coloring of choice
  • 1 tsp almond extract

Instructions
 

To make crust:

  • Mix together crust ingredients and press 2/3 of the dough into a 9″x13″ greased pan.

To make filling:

  • Mix together filling ingredients, and spread over crust. Crumble remaining 1/3 of the crust dough on top.
  • Bake at 325 degrees for 45-50 minutes, until lightly golden.

To make icing:

  • Mix together ingredients with a whisk. Drizzle over bars.
