Step-by-Step Directions
Step 1: Cream together sugar, eggs, oil and vanilla until blended.
Step 2: Sift together flour, salt, baking powder and baking soda.
Step 3: Add flour mixture to sugar mixture until fully mixed.
Step 4: Stir in the grated apples. Batter will be thick.
Step 5: Spoon into greased and floured mini loaf pans, filling about 2/3 full.
Step 6: Bake for 5 minutes. Sprinkle butterscotch chips over the mini apple cakes and continue baking until a toothpick inserted in the center comes out clean. The butterscotch chips will melt and seep into the cake for the ultimate deliciousness.
Step 7: Let mini cakes cool in pan for about 10 minutes before carefully removing them to wire cooling rack.
