These mini butterscotch apple cakes are ridiculously good! Perfectly moist and loaded with fresh apples and butterscotch morsels that, when paired together, will blow your mind. Who knew apple and butterscotch were made for each other?

Enjoy the little cakes as a snack with hot tea or coffee, or add a scoop of ice cream alongside for an extra special dessert treat.

What Makes this Recipe Special

  • Butterscotch and apple together are the best, best, best.
  • The chewy caramelized cake edges are beyond.
  • Perfectly moist inside with a crispy, lacy exterior.
  • Large enough to share but small enough for self-indulgence.
  • Easy to wrap and give individual apple butterscotch cakes as gifts.
  • Can also be made as a larger cake in a single pan.

Ingredient Notes

labeled ingredients for butterscotch apple cakes
  • Apples – I recommend sweet apples, like Honeycrisp, Fuji or Gala for this recipe.
  • Butterscotch chips – These are the key to the magic.

Equipment

  • Grater – Use a coarse, not fine, grater, or you’ll end up with apple mush. This is the multi-grater I use. I like it because it has non-slip feet and can stand right over the bowl.
  • Mini loaf pan – This is the one I have. Actually, I have two of them. They’re nonstick and have a nice weight to them.
  • Baking spray with flour – Even though I use a nonstick loaf pan, I always prep it with a flour-based baking spray like this one.

Step-by-Step Directions

Step 1: Cream together sugar, eggs, oil and vanilla until blended.

Step 5: Spoon into greased and floured mini loaf pans, filling about 2/3 full.

Step 6: Bake for 5 minutes. Sprinkle butterscotch chips over the mini apple cakes and continue baking until a toothpick inserted in the center comes out clean. The butterscotch chips will melt and seep into the cake for the ultimate deliciousness.

Step 7: Let mini cakes cool in pan for about 10 minutes before carefully removing them to wire cooling rack.

Recipe FAQ

What type of apple is best for apple cake with butterscotch chips?

I think sweet apples are the way to go. Honeycrisp, Gala and Fuji apples are all great choices.

To peel or not to peel?

That IS the question. I don’t bother to peel the apples because grating them ensures there’s no toughness and the skin is packed with nutrients. But, if you’d prefer to do the work of peeling all your apples, who am I to stop you?

Ingredients

  • 4 cups grated sweet apples
  • 2 cups granulated sugar
  • ¾ cup oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup butterscotch chips

Instructions

  • Preheat oven to 350 degrees. Grease and flour mini loaf pans.
  • In mixer, cream sugar, oil, eggs and vanilla together.
  • In a separate bowl, sift together flour, salt, baking powder and baking soda. Add to sugar mixture and combine. Batter will be thick. Mix in apples.
  • Pour into prepared loaf pans, filling about ⅔ full. You'll have enough batter for approximately 8 cakes.
  • Bake for 5 minutes. Remove and sprinkle butterscotch chips on top of each cake. Return to oven and bake 30-45 minutes or until toothpick or knife inserted in center comes out clean. (Oven cook times will vary.) Let cool 10-15 minutes in pan before removing cakes to wire racks. Delicious served warm or at room temp and perfect with a scoop of vanilla ice cream.

To bake in one large pan

  • Pour batter into a greased and floured 9×13-inch baking pan. Bake for 25 minutes, remove and sprinkle butterscotch chips evenly over the cake. Return to oven and bake 30 minutes or until toothpick or knife inserted in center comes out clean.
