Sloppy Joe Hash Brown Casserole

This Sloppy Joe Hash Brown Casserole recipe is hearty, delicious and a quick and easy casserole to prepare for a busy weeknight dinner.

Tender chunks of potato are baked in a tangy tomato sauce, mixed with ground beef and topped with a layer of melted cheese. Sloppy Joe casserole is a winner.

Sloppy Joe Hash Brown Casserole Recipe Ingredients

  • 1 lb ground beef
  • 1 32-oz pkg frozen cubed hash browns, thawed.
  • 1 15.5 oz can Manwich Original sloppy joe sauce
  • 1 10.5 oz can condensed cream of potato soup
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon red pepper flakes (more or less, as desired)
  • 1 cup shredded cheddar cheese (sharp or mild, your choice)

How to make this easy sloppy Joe casserole with hash browns

Cook the ground beef and drain off any extra grease. Stir in the cream of potato soup, Manwich, salt, pepper and red pepper flakes.

Spread the thawed hash browns over the bottom of a greased 9″ x 13″ baking dish.

Spread the meat mixture over the hash browns.

Cover with foil and bake for about 40 minutes. Remove the foil and bake for another 15 minutes, sprinkling the shredded cheese over the top in the last 5 minutes of baking.

This sloppy Joe with potatoes casserole is delicious served with fresh baked bread, biscuits or rolls and a crisp green salad.

Make-Ahead Directions

Prepare the casserole as directed and put all ingredients in the baking dish except for the cheese. Cover and refrigerate until ready to bake. Either let it sit on the counter 20-30 minutes before baking to take the chill off the ingredients or add additional baking time to ensure everything is heated through. Add the shredded cheese to the top in the last 5 minutes of baking as directed in recipe.

Storage

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.

Ingredients
  

  • 1 lb ground beef
  • 1 15.5 15.5 oz can Manwich Original Sloppy Joe Sauce (or your favorite flavor variety)
  • 1 10.5 oz can condensed cream of potato soup
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon red pepper flakes (more or less as desired)
  • 1 32 oz pkg frozen cubed hash browns thawed
  • 1 cup shredded cheddar cheese

Instructions
 

  • In a skillet, brown ground beef. Drain off extra grease. Add sloppy Joe sauce and potato soup.
  • Place hash browns in a greased 9 x 13-inch baking dish. Top with meat mixture. Cover and bake at 450 degrees for 30 minutes. Uncover; bake 10 more minutes sprinkling with cheese in the last 5 minutes.
