Thai Chicken and Fried Rice Wontons

Thai Chicken and Fried Rice Wontons

When staying in tastes like going out, I know I’ve hit on a winning recipe, and this one qualifies as a winner. (And so did my fall recipe.) What can I say? I like what I make, and more importantly so do other people.

Anyhow, the wonderful flavor in this recipe for Thai Chicken and Fried Rice Wontons is due in no small part to the superior flavor and exceptional taste of Ling Ling’s Thai-Style Chicken frozen fried rice— a key ingredient.

Ling Ling’s Infusion Cooking Method infuses each grain of fried rice with their signature sauces so you get incredible flavor and exceptional taste in every bite. I simply can’t tell the difference between Ling Ling Asian Style Fried Rice and my restaurant favorites. In fact, I’m inclined to say the Ling Ling taste is superior because of the infusion cooking.

But, let’s start cooking.

Stir fry some chicken breast with onions, garlic and red chili pepper. Stir in some sweet Thai chili sauce, red curry paste and basil, and set aside.

Bake the wontons for about 5 minutes and while they’re baking, cook one pouch of the fried rice in the microwave. It’s ready in minutes so it fits into a recipe cooking flow easily.

Remove the wontons from the oven and spoon some fried rice into each one. You may need to use your fingers to move the wonton wrapper a bit so you can fill them. Top each one with a few pieces of the cooked chicken, and then pop them back in the oven for another 5-7 minutes. When the wontons start to brown and crisp on the edges, they’re ready.

Serve several to each person as a meal or put them all on a platter to serve individually as appetizers. They’re delicious!

Ingredients
  

  • 1 pouch Ling Ling Thai Fried Rice
  • 1 ½ pounds chicken breast cut into 1/2-inch cubes
  • 2 tablespoons olive oil
  • ¼ cup onion diced
  • 2 cloves garlic minced
  • 1 red chili pepper minced
  • 3 tablespoons sweet Thai chili sauce
  • 2 teaspoons red curry paste
  • â…“ cup fresh basil chopped
  • 1 package wonton wrappers

Instructions
 

  • Heat oven to 350 degrees. 
    Spray cooking spray on mini muffin tins. Line with wonton wrappers; brush lightly with oil.
    Sautee chicken in olive oil for 4 minutes over med-high heat. Add onions, garlic and red chili pepper and continue sauteeing for about 3 minutes or until chicken is fully cooked. Remove from heat. 
    Mix in chili sauce, red curry paste and basil. Set aside.
    Cook one pouch Ling Ling rice in microwave according to package directions.
    Bake empty wontons for 5 minutes. Remove from oven. Spoon fried rice into cups and top with a few pieces of cooked chicken. Return to oven and bake 5-7 minutes.
    Serve immediately.
