Asian Style Garlic Meatloaf

This Asian-style Garlic Meatloaf puts a flavorful twist on classic meatloaf. Super simple to prepare and cooked in a pressure cooker in 30 minutes, it’s bound to become a new comfort food recipe favorite.

Key Ingredients

  • Ground beef – I like to use an 80/20 blend, but 85/15 would be ok too.
  • Ground pork – Using pork in addition to ground beef adds richness to the flavor, and I recommend an 80/20 blend.
  • Asian Garlic Dip Mix -I love this seasoning mix from Tastefully Simple. It gives an Asian-style twist to garlic with the sweetness of brown sugar and a hint of red pepper. (Save 10% with code EMMTS10 through September 1, 2021 online at TastefullySimple.com.)
  • Onion Onion seasoning – A blend of onion, chives, shallots and sea salt. It’s perfect in this recipe!
  • Panko crumbs – I like using panko as a binding agent rather than plain bread crumbs, but you could use either one.

Step-by-Step Directions

Step 1: In a large bowl, combine all ingredients.

Step 2: Mix just until combined; don’t overmix.

Step 3: Form into a greased round cake pan. The size will depend on how big your instant pot or multicooker is. A 6-inch cake pan fits inside mine. (See notes on cook time in recipe card.)

Step 4: Place rack in a 6 quart or larger multicooker and add 1 1/2 cups hot water. Place pan of meatloaf on the rack. Set multi-cooker to Pressure Cooker on HIGH for 25 minutes.

When meatloaf is done, allow a 10-minute natural release, then continue with a quick release.

Step 5: Drain extra grease off meatloaf.

Step 6: Cut meatloaf into slices and serve with steamed vegetables and rice.

Helpful Tips

  • If you don’t have an 8-inch cake pan or it doesn’t fit your multi-cooker, use 2 sheets of heavy duty aluminum foil to create a pan that will fit your multi-cooker.
  • Make Ahead & Freeze: Prepare step 1 and place in a gallon freezer bag. Seal well,label and freeze. Thaw completely and continue with step 2.
  • Slow Cooker Option: Following directions above, line a 3-quart or larger slow cooker with aluminum foil. Prepare step 1, form loaf to fit your slow cooker. Place in slow cooker. Cook on LOW 6 hours.

Recipe FAQ

Should I use panko or bread crumbs in meatloaf?

Panko is a type of bread crumb. It’s lighter and flakier and doesn’t absorb as much of the oil in the meatloaf but still acts as a binding agent. However, it can be used interchangeably with plain bread crumbs.

Can this Asian meatloaf be made ahead and frozen?

Yes! Mix the ingredients together (steps 1 & 2) and place in a gallon freezer bag. Seal well, label and freeze. Thaw completely in the refrigerator and continue with step 3.

Can leftover meatloaf be frozen?

Yes, I do this all the time and reheat in the microwave. I freeze in single-serving portions in tightly sealed freezer-safe containers.

Ingredients
  

  • 1 pound lean ground beef
  • 1 pound ground pork
  • ½ cup shredded carrots
  • ½ cup plain panko bread crumbs
  • 1 packet Asian Garlic Dip Mix
  • 2 large eggs
  • 2 teaspoons Onion Onion™ Seasoning

Instructions
 

  • In large bowl, combine all ingredients. Mix until just combined, being sure not to over mix.
  • Form into a greased 8-inch round cake pan*.In a 6-quart or larger multi-cooker, add wire rack and 1½ cups of hot water. Placecake pan on rack. Set multi-cooker to Pressure Cooker on HIGH for 25 minutes. When meatloaf is done, allow a 10 minute natural release, then continue with aquick release. Remove meatloaf; drain off grease.Serve with steamed vegetables of choice.

Notes

  • Mix ingredients just until combined. Avoid overworking the meat mixture.
  • If using a 6-inch cake pan (instead of an 8-inch,) the meat mixture will be thicker and will need additional cook time. Add 5-8 more minutes.
  • Make-Ahead & Freeze: Prepare step 1 and place in a gallon freezer bag. Seal well, label and freeze. Thaw completely and continue with step one.
  • If you don’t have an 8-inch cake pan or it doesn’t fit your multi-cooker, use2 sheets of heavy-duty aluminum foil to create a pan that will fit your multi-cooker.
